Churak Recipe Iraqi traditional sweet bread


Churak\choereg is absolutely my favorite bread/pastry to make. In my country, Iraq, this kind of bread is sold in almost all bakery shops and can be found being sold in streets by street hawkers.
It's a sweet bread topped with sesame seeds and served with tea as an afternoon snack (Asrunia).
sometimes Churak stuffed with dates paste ( pressed dates) and sometimes with halkum/Turkish delight.

I have habit recently (or whatever it's called) that I google Iraqi recipes to do a little research about that recipe and what it's origins. So I googled Churak/Choereg and here is what I found out.
Iraqi Churak has a very similar version of it ( if not the same) in Armenia and it has the same name ( Choereg) and it's a traditional Armenian sweet bread that usually made for Easter time.

When I got married and moved to US, few years ago, I've looked everywhere for this bread but I was unlucky, I couldn't find it anywhere so I decided to learn to make my own Choereg.
And the journey of finding the right recipe starts. I've tried several recipe and none of them worked for me for several reasons until I found the right one.
I've made this recipe so many times, several times a year. And now I decided to share it with you.


This recipe doesn't need any special ingredient, only cardamom which is it optional and you can skip it.
Start preparing your ingredients all in your table and first pour yeast in quarter cup off lukewarm water with one tbsp of sugar mix it, cover it and sit a side while you preparing other ingredients.
I like to do this step instead of just pouring yeast with other ingredients, because in this way I can test the yeast if it's good or not. Yes it happened with me before and the yeast wasn't working and I had to throw the bread I made.


I like to gather all my ingredients in stand mixer bowl, pour everything in that bowl except milk.
then add yeast and start adding milk gradually.
transform the dough to a greased large bowl, kneed it a little and form a ball.
Cover it with plastic wrap and kitchen towel and place it in warm place. I like to place mine in the oven with oven light on to make the oven warmer. sometimes I turn my oven on on lowest degree while I'n preparing my ingredients only for 5 to 10 minute and leave oven door slightly open while preparing the dough if I feel it was too warm.



 45 minutes later your dough should be doubled in size, if not leave it for 20-30 minutes more.
Place the dough on the table, I like to use my wooden cutting board or this lazy Susan ( shown in pictures). This dough doesn't need to be on floured surface, plus the flour will prevent churak from sticking to it self.
divide the dough into even balls ( the size you like or prefer ) then roll each ball into long ropes using your hands.



Coil each rope around itself to make a snail like shape. and place pieces into a baking sheet lined with baking paper, leave about 2-3 inches in between. cover them and let them rest while you preheat your oven to 350f or 180c.
In a small bowl beat egg yolk, brush them and sprinkle sesame seeds on top.
Bake for 10-15 minutes or when turns golden, remove from oven and let it cool slightly and serve warm with a cup of tea.
Store churak in an airtight containers for about a week in room temperature or in the freezer for few months.
                                                                                                                                                               
Churak RecipeIngredients:
- 3 cups all-Purpose flour
- 1\2 cup granulated sugar
- 1\2 cup lukewarm milk
- 1\4 cup lukewarm water
- 1\3 cup vegetable oil
- 1 large egg
- 1 tbsp instant yeast
- 1 tsp ground cardamom

for topping:
- 1 egg yolk
- 1 tsp sesame seeds

Directions:
- In a small bowl or glass of water add lukewarm water, 1 tbsp of sugar, and yeast, stir, cover and sit aside for 5-10 minutes or until double in size.
- In a large bowl add all other ingredients except milk.
- Add yeast to other ingredients and start mixing for 1 minute ( if using stand mixer, and a little more if by hand).
- Add milk gradually and keep mixing, keep mixing until it form a slightly sticky dough.
- Place it into a greased large bowl, knead it by hand for few minutes and form into a ball. cover it with a plastic wrap and a towel and sit it in a warm place for 45-60 minutes to rise or until it double in size.
- After it doubled in size, place the dough into a floured surface and divide it into even balls about 2 inches each ( it depends on how big/large you want your Churak pieces).
- Cover the balls with towel and start with the first ball you formed, roll each ball into ropes and coil each rope around itself ( to look like a snail ).
- Place them into a greased baking sheet, cover and sit it to rest for 10 minutes.
- Preheat oven to 350f or 180c.
- Brush the pieces with beaten egg yolk and sprinkle sesame seeds over.
- Bake in oven for 10-15 minutes.
- Let it cool slightly, and served warm with a cup of tea.
                                                                                                                                                                


10 Easy and Yummy Oatmeal Breakfast





Happy national oatmeal day! You didn't know it's oatmeal day today ! yes me too, two days ago when I was browsing oatmeal recipes I found out that oatmeal have a national day, then I said let's google it and see when is that and What! it's on October 29th. What a coincidence!
I used too many exclamation marks, am I ?Anyways, a bowl of oatmeal is my everyday breakfast with a cup of hot cocoa, except sometimes I eat cheese just to break routine. My oatmeal toppings is differ from time to time, like fruits (banana, apple, blueberry or any fruit available) , nuts ( walnut, pecan, ptistashio, or almond)
My husband have his own oatmeal recipe which includes dark chocolate or crashed granola bar, also will share his recipe with you later.

Znoud El Sitt ( Arabic Sweets )


Week 21

Znoud El Sitt


It's crispy rolls filled with a thick creamy filling. It's easy to make with simple ingredients.


Ingredients: 

The dough:
- Phyllo dough ( or filo) very thin dough used for pastries


The filling :
- 2 cups milk
- 3 tbs cornstarch
- 1 tbs Sugar  (on taste )

Syrup:
- 2 cups Sugar
- 1 cups water
- 1 tbs lemon juice
- 1 tbs flower water 

Dough paste:
- 1 cup water

Frying:
- Vegetables oil

Topping:
- ground raw pistachios


Process:
- for the syrup; add water and sugar in a saucepan over low heat. 
- For the cream place milk, cornstarch  and sugar in a saucepan stir till mixed together then put over mid-heat, keep stirring till it thickens. put it aside and let it cool down. then put in fridge for around 15 mins or till completely cools down.
- get your dough ready and covered with kitchen towel, because it's super fast to dry out. uncover only the part that will be used, with pizza cutter or knife cut phyllo into strips about ( 20cm x 7cm) or how long you wish. take 2 strips put one horizontally and the other vertically above the first one to form the letter "T"
- take about 1 tbs or less but don't over filled, put filling into the crossed area and fold both sides of the horizontal strip over the filling, and start to roll down. 
- with a brush dipped into water a bit swipe into the end of the strip to make roll stick. 
- put it in a pan or dish and cover it with towel. 
- in a pan put enough oil to let about half of your Znoud El Sitt roll souk into oil, when oil heated enough start laying down few rolls (keed your uncooked rolls covered with towel )  when all sides turned golden take it out with a slotted spoon and put it into the syrup for few seconds.
- Place Znoud El Sitt on your serving dish and top them with ground pistachios. 

Served hot, or warm. Keep water and tissues nearby ;)

This week for croissant I just followed Laura Vitale recipe



Note for myself:
I guess only two things I did wasn't right :D
first; I guess I didn't left the dough to rest enough, 6 hours wasn't enough
Second: Mistakenly added about 2 Tbsp salt :D I tried to remove a bit but still salty a bit

Just to remember that next time.






Strawberry Pancake


Week 7

Pancake

Ingredients :
- 2 cups of flour
- 2 cups milk
- 2 tbsp sugar ( on taste)
- 2 eggs
- 1 tsp Strawberry flavour
- 2 tsp baking powder
- 1 tsp backing soda
- 2 tbsp vegetables oil
- 1/4 tsp salt


Process: 
1- In a large bowl mix all the dry ingredients ( flour, sugar, baking powder, baking soda, salt)
2- add eggs and oil & strawberry flavour to the dry mixture and add milk gradually till everything mixed and you get a nice soft liquid mixture.
3- Use a flat grill pan and add a little bit of oil over low or mid heat, now by using ladle add to your pan, when your pan cake start bubbling that's mean it's ready to flip.
4- Now all your pancakes ready, Enjoy !

Little Notes:
- I used only 2 tbsp because my father have Diabetes, and so I can freely add on top what I want without being too sweet.
- You can skip baking soda if not available.
- I used the lid of double sided grill pan , which is the flat side.

Homemade Beef Burger

Week 6

Beef Burger (with Bread Crumbs)



Ingredients:
1/2 kg Ground beef 
1/2 cup chopped onion ( or as desired )
1/2 cup Bread Crumbs 
Salt & black pepper ( On Taste)
Garlic Powder as desired )

Process: 
1-In a large bowel mix beef, chopped onion, bread crumbs, salt, black pepper and garlic powder together, you can mix them by hand or in a mixer machine .
2- Shape it as circles by your hand or if you have any tool to make a perfect circle. don't worry about shape it would be delicious anyways. ;)
3- Now it's up to you to grill or to fry, mine is grilled.





Baqlae Rice



Week 5 

Baqlae (Baqla) Rice 
( Iraqi Food ) 



Ingredients: 

- 2 cups rice
- 1 cup pealed baqlae
- 1 cup of chopped dill
- Salt ( On taste)
- Vegetarian Oil ( as desired )
- water


Process: 

1- Wash rice few times, put aside.
2- on a pot put oil over medium heat put dill, baqlae and pinch of salt, stir for a minute.
3- add rice and about 2 cups of water (add more if rice not covered) and salt.
4- after water dry out stir rice a bit and leave for few minuter over low heat and keep around.
5- your baqlae rice is ready to serve immediately. 


* Usually served with yogurt.
*Sometimes baqlae rice cooked with drum stick or meat.
* I like baqlae rice to have more baqlae so next time I'm going to add more than 1 cup.

Bulgur Kuba With Egg (Arabic Food )

Week 2
 
Bulgur Kuba With Egg (Arabic/Iraqi Food )

Ingredients:

  
Dough:
- 2 cups Bulgur
- 2 eggs
- Salt on taste
- 1 tsp cumin
 Filling:
- 1\2 kg ground beef
- 1 finely chopped onion
- almond & raisin "Golden raisin" (as desired) ( I used 1/2 cup of each )
- 1 tsp cumin
- oil ( for frying)

Process: 1- wash Bulgur , then put in boiled and a bit salted water I added 1/2 tsp salt but you can add a bit more,( water 1 inch above bulgur) on low heat till dried ( just like how you cook rice) keep stirring, it will dry fast. 2- Smash bulgur with a spoon,turn off heat and leave to cool down 3- add eggs, and cumin to bulgur and mix them together. taste to check if it need more salt. you can mix by hand or by a machine 4- fried finely chopped onion with ground beef till turned red, Add raisin, almond, salt, black pepper, and cumin mix then add few drops of water and leave on low heat for few minutes. turn off heat and wait it to cool down.
5- make circles of the bulgur dough fill with beef and closed by hands making a ball, press a bit to make it as it shown in the picture above. and you can make any other shape you want. 6- preheat oil in a pan and fry Kuba till turned blonde, don't leave over heat for long time. Now it's ready to serve !

Potato & Beef Kufta

Week 1

Potato & Meat Kufta

Ingredients:
- 1 Kg Boiled Potatoes (or as desired )
- 1\2 Kg Ground Beef (about half amount of potatoes)
- 2 eggs
- Onion
- Salt & Black pepper
- Bread Crumbs

Process:
1- Fried finely chopped onion then add Ground meat, until turned red add few drops of water and leave on a low heat for few minutes.
2- Mash Potatoes in a large bowel then add, fried onion and meat, and 2 eggs , mix together.
3- add black pepper and salt to taste.
4- Shape the mixture into balls or as desired, crumb them with bread crumbs.
5-  put a lot of sunflower oil in pan over a medium heat, put your Kufta balls and keep your eyes on to do not be burned.
Now it's ready to serve !

It can be served with rice, pasta, or with tomato souse.

Candy Cane Cookies




Candy Cane Cookies

Ingredients: 
5 cups of All Purpose flour
4 Eggs
1 cup of Sugar
2 tsp of Baking Powder
1 tsp of Salt
1/2-3/4 cup of unsalted butter at room temperature " = 1 stick " (I used 8 Tbsp sunflower oil )
1 tsp of Vanilla Extract
 Red Food Coloring




Process:
1- In a bowl mix butter and sugar by a mixer for 1 minute, add eggs one by one.
2- Add flour along with baking powder,salt and vanilla extract until the dough turn hard and not sticky ( if sticky add a bit more flour , and if it's hard add a little bit of milk and mix again )
3- divide the dough into half , add a food color to one of them, ( add more until you see the color you're looking for, note that after baking color will be lighter)
4- refrigerate them for 1 hour, take the dough out of the refrigerator to rest for few minutes ( I put them into the fridge for 5-10 min
5- make the candy cane shape or any shape you want, add the decorations you want, it's fun to do this with your kids, friends or family.
6- preheat oven to 180-190 degrees ( or 
375 F ) and line a baking sheet under your cookies and put them into the oven for 10 min ( if you don't have baking sheet, just oil your pan ) keep your on it. 

 

Banana Juice

Hi everyone 
Today I woke up with an idea to do banana juice with Nutella, I don't know if someone did it before, I'll google that later. 




Now lets get started:

Ingredients  :
- 1 Banana
1 cup Milk 
1 tsp Nutella 

Instruction:
-Add all the ingredients in the blender, mix them for 1 min or less.
-Ta Da it's ready to serve.

The taste of the juice was mix of lite Nutella, banana and milk if you prefer taste of one of the ingredients you can add more of it. ex; another tsp of Nutella.
P.S. I burned the pancake little bit :D but still yummy
