Bulgur Kuba With Egg (Arabic Food )
Dough:
- 2 cups Bulgur
- 2 eggs
- Salt on taste
- 1 tsp cumin
Filling:
- 1\2 kg ground beef
- 1 finely chopped onion
- almond & raisin "Golden raisin" (as desired) ( I used 1/2 cup of each )
- 1 tsp cumin
- oil ( for frying)
Process:
1- wash Bulgur , then put in boiled and a bit salted water I added 1/2 tsp salt but you can add a bit more,( water 1 inch above bulgur) on low heat till dried ( just like how you cook rice) keep stirring, it will dry fast.
2- Smash bulgur with a spoon,turn off heat and leave to cool down
3- add eggs, and cumin to bulgur and mix them together. taste to check if it need more salt. you can mix by hand or by a machine
4- fried finely chopped onion with ground beef till turned red, Add raisin, almond, salt, black pepper, and cumin mix then add few drops of water and leave on low heat for few minutes. turn off heat and wait it to cool down.
5- make circles of the bulgur dough fill with beef and closed by hands making a ball, press a bit to make it as it shown in the picture above. and you can make any other shape you want. 6- preheat oil in a pan and fry Kuba till turned blonde, don't leave over heat for long time. Now it's ready to serve !
